Ingredients
- 1 roll puff pastry
- 2 eggs
- 2 oz grated Parmesan cheese
- 1 zucchini
- 4 slices mortadella with pistachios
- 3.5 oz fontina cheese (cubed)
- to taste salt
- 1 tablespoon olive oil

Steps
Preheat the oven to 350 degrees F.
Wash the zucchini and slice it thinly.
In a pan, heat the olive oil. Add the zucchini, salt, and pepper and cook for about 5 minutes. Once cooked, let them cool.
In a small bowl, beat the eggs with the grated Parmesan cheese and set aside.
Unroll the puff pastry and place it on a baking pan. Fold the edges inward and prick the base with a fork.
Place the mortadella slices on the base, sprinkle the fontina cubes, and add the cooled zucchini.
Pour over the egg and Parmesan mixture and bake for 20/25 minutes.
