Ingredients
- 4 eggs
- 9 oz frozen peas
- 1 tbsp extra virgin olive oil
- to taste salt

Steps
Pour a drizzle of extra virgin olive oil in the pan, add the frozen peas and cook them over medium heat for about 10 minutes. Stir occasionally and adjust with salt. They should become nice and tender.
When the peas are ready, gently move them towards the edges of the pan, leaving a hole in the center. That’s where we’ll cook the eggs.
Break the eggs directly into the space left in the center of the pan and immediately start stirring them with a spatula or a wooden spoon. Scramble them gently, over low heat, until they start to set but remain nice and soft.
When the eggs are almost ready, mix everything together to let it flavor well.
