Ingredients

  • 8 chicken thighs
  • 14 oz button mushrooms
  • 1 clove garlic
  • Half white onion
  • 1 glass white wine
  • 1 bunch parsley
  • to taste salt
  • 3 tbsps extra virgin olive oil

Steps

  • Clean and slice the button mushrooms thinly.

    Finely chop the garlic and onion.

  • In a large skillet, heat the extra virgin olive oil over medium heat.

    Add the chopped garlic and onion and sauté until they become golden and translucent.

  • Add the chicken thighs and brown them on both sides.

    Once the chicken is golden, add the button mushrooms and chopped parsley to the skillet and mix well with the other ingredients.

  • Deglaze with the wine and let the alcohol evaporate. Adjust the salt, cover the skillet with a lid, and let it cook on medium-low heat for about 20-25 minutes or until the chicken is fully cooked.

  • Make sure the mushrooms are tender and the sauce has thickened slightly.

    Serve the chicken with mushrooms hot, perhaps accompanied by sides like mashed potatoes or skillet carrot sticks.
