Smart Strawberry Tartlets

The smart strawberry tartlets are delicious treats perfect for a fresh snack or an elegant dessert.

The mascarpone cream does not require cooking, which makes these tartlets really easy and quick to prepare. You can also customize them with other fruits of your choice.

Ingredients

  • 3 eggs
  • 1 1/2 cups flour
  • 2/3 cup sugar
  • Half packet baking powder
  • 1 1/4 cups sweetened plant-based whipping cream
  • 5.3 oz mascarpone
  • 1 packet vanillin
  • 2 cups strawberries
  • as needed dark chocolate chips

Steps

  • Preheat the oven to 356°F and grease 8 tartlet molds that have the hollow.

    In a large bowl, beat the eggs with the sugar until you get a frothy mixture.

    Add the baking powder and sifted flour and continue to mix for about 1 minute.

  • Pour the mixture into the molds, filling them about 2/3 full.

    Bake for 15-20 minutes until golden and puffy. Remove from the oven and let them cool.

  • Meanwhile, whip the sweetened plant-based cream until firm and soft. Add the mascarpone by spoonfuls, the vanillin, and mix gently until the ingredients are combined.

    Fill a piping bag and set aside.

  • Wash the strawberries, cut them into small cubes, and set aside.

  • Once the tartlets have cooled, fill their hollow with the mascarpone cream and decorate with the diced strawberries and chocolate chips.
