Perfect for a Sunday lunch with family or a special dinner with friends, the lemon meatballs have a very elegant look and require few ingredients, but the final result is truly exciting.
Serve them accompanied by a vegetable side dish or a simple white rice.

Ingredients
- 14 oz ground veal
- 3.5 oz ground pork
- 2 eggs
- 3.5 oz grated Parmesan cheese
- 1 cup milk
- 4 slices bread slices
- 1 tbsp potato starch
- 1 lemon
- 2 tbsp extra virgin olive oil
- 1/4 cup white wine
- to taste salt
- 1 shallot (small)

Steps
Start by placing the slices of bread in a bowl and soaking them with the cup of milk. Let them soften for a few minutes.
In a large bowl, combine the ground veal and ground pork. Add the eggs, grated Parmesan cheese, potato starch, and the bread well-squeezed from the milk.
Add the grated lemon zest, season with salt, and mix well to combine all the ingredients.
With slightly oiled hands, form meatballs the size of a ping-pong ball.
In a large pan, heat the extra virgin olive oil. Add the finely chopped shallot and let it turn golden. Add the meatballs and brown them evenly on all sides until golden.
To avoid breaking them, I recommend moving the pan to facilitate the operation.
Once browned, deglaze with the white wine and let it evaporate. Pour the freshly squeezed lemon juice, cover with a lid, and cook for about 15-20 minutes.
If the sauce dries out too much, add a bit of hot water or broth during cooking.
