Soft coconut and banana cookies

Ingredients
- 2 bananas (ripe)
- 3 cups shredded coconut (desiccated)
- to taste dark chocolate
Tools
- Ice cream scoop
- Bowl
- Parchment paper
- Baking sheet
- Glass
Steps
Mash the 2 bananas in a bowl until you obtain a smooth cream.
Add the shredded coconut and mix until you obtain a soft but moldable dough.
Shape into balls using an ice cream scoop and place them on a baking sheet lined with parchment paper, pressing them slightly with a glass.
Bake in the oven at 356°F for 15 minutes, until golden.
Once cool, decorate with melted dark chocolate.
Storage and tips…
The cookies stay fresh for 3 days in an airtight container.
Stored at room temperature they remain soft; if you prefer a firmer texture, keep them in the refrigerator.
Use very ripe bananas: they will make the dough sweeter and more fragrant without the need for added sugar.
If the dough is too soft, add one tablespoon of shredded coconut at a time until you reach the ideal consistency.
