Ingredients

  • 8 squid (large)
  • 1 potato
  • 1 slice white bread
  • 2 cloves garlic
  • 2 tablespoons grated Parmesan cheese
  • 1 bunch parsley
  • 1 glass white wine
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • Carefully clean the squid, removing the entrails, skin, and beak. Wash them thoroughly under running water.

    Chop the tentacles with a knife.

    Boil the potato until tender. Peel it and mash it with a fork in a bowl.

  • Prepare a breadcrumb mixture by chopping the white bread with parsley, a clove of garlic, a drizzle of extra virgin olive oil, and salt in a food processor.

  • Place the breadcrumb mixture in the bowl with the mashed potato and chopped tentacles. Add the grated Parmesan cheese, adjust the salt, and mix until all ingredients are combined.

  • Put the mixture in a piping bag and fill the squid, leaving a one-inch edge that we will close with a toothpick.

  • In a non-stick pan, heat two tablespoons of extra virgin olive oil and sauté a clove of garlic until golden.

  • Place the stuffed squid, deglaze with white wine, add a handful of chopped parsley, and cook for about 10 minutes.
