Ingredients

  • 1 1/4 cups dried chickpeas
  • 2 stalks celery
  • 1 tablespoon tomato paste
  • Half onion
  • 2 tablespoons extra virgin olive oil
  • to taste salt
  • to taste black pepper

Steps

  • First, soak the dried chickpeas in cold water for at least 8 hours (or overnight). After soaking, drain and rinse them under running water.

  • In a pot, cook the chickpeas in plenty of water for about 1 hour until tender. Drain and set aside.

    Alternatively, you can use canned chickpeas.

  • In a saucepan, heat the extra virgin olive oil. Add finely chopped onion and chopped celery and sauté until the onion becomes translucent.

    Add the cooked chickpeas, tomato paste, salt, and pepper. Stir and let the mixture season for a few minutes.

    Pour in some water to cover the chickpeas and bring to a boil. Cover with a lid and let cook on low heat for about 20-30 minutes, stirring occasionally.
