Tuna potatoes are a delicious cold summer dish that is easy and quick to prepare.
Perfect to take to the beach, pool, or office.
With just three ingredients, you will have a fresh and tasty dish.
Below you will find the recipe for pasteurized mayonnaise, but if you are in a hurry you can use store-bought mayonnaise.

Ingredients
- 1.1 lbs potatoes
- 4.2 oz tuna in oil
- 2 eggs
- 2.2 cups seed oil
- Half lemon (squeezed)
- 1 pinch salt

Steps
First, boil the potatoes with their skins on.
Once cooked, drain them, let them cool, then peel, dice, and set them aside in a large bowl.
Prepare the pasteurized mayonnaise with the Thermomix
Place a jug or beaker on the Thermomix lid and measure the oil
Put the vinegar and salt in the bowl 3 min 212°F speed 1
With the blades moving at speed 4, add the eggs through the hole and then the oil in a VERY SLOW STREAM
Once the oil is incorporated, stop the machine and insert the BUTTERFLY
Whip the sauce obtained for 3 min speed 4 in REVERSE DIRECTION
The mayonnaise is ready. Transfer it to a preferably sterilized glass jar and store it in the refrigerator.
Finish the preparation.
Drain the tuna and add it to the bowl with the potatoes.
Add about 4 tablespoons of pasteurized mayonnaise and gently mix the ingredients with a spatula.
Our tuna potatoes are ready.
Serve cold.
Storage and Tips
Store in the fridge covered with plastic wrap
Consume within 2 days
For a more indulgent version, you can replace the mayonnaise with tuna sauce and add capers or black olives
