Ingredients
- 2 zucchini
- 2 carrots
- 1 stalk celery
- to taste salt
- to taste black pepper
- 1 tablespoon extra virgin olive oil
- A few leaves mint (fresh)
- Half lemon (juiced)

Steps
Wash the celery stalk, remove the outer strands, and dice it.
Peel the carrots and slice them.
Wash the zucchini, remove the ends, and dice them.
Put the chopped vegetables into the food processor, season with extra virgin olive oil, lemon juice, salt, and pepper, and pulse until you achieve the result shown in the photo below.
Transfer the prepared salad into single-serve bowls and garnish with fresh mint leaves.
