Ingredients
- 1 3/4 cups venere rice
- 3.5 oz mackerel in oil
- 1.75 oz smoked salmon
- 10 yellow cherry tomatoes
- 10 green olives in brine
- 1 bunch mint
- A few leaves basil
- to taste parsley
- to taste extra virgin olive oil
- to taste Himalayan salt (pink)
- 1 stick red bell pepper (for garnish)

Steps
First, cook the venere rice according to the instructions on the package. Once cooked, drain and let it cool completely.
Meanwhile, prepare the additional ingredients.
Drain the mackerel in oil and crumble it coarsely.
Dice the smoked salmon. Halve the yellow cherry tomatoes and green olives.
Finely chop the washed mint, basil, and parsley leaves.
In a glass baking dish, combine the cooled venere rice, mackerel in oil, smoked salmon, yellow cherry tomatoes, and green olives.
Add the chopped herbs and season with extra virgin olive oil and Himalayan salt.
Gently mix to combine all ingredients well and refrigerate for at least 30 minutes.
Before serving, garnish the salad with fresh mint leaves and some pieces of red bell pepper for an extra touch of color and freshness.
Storage and Tips …
Store in the fridge in a jar with a lid, preferably with an airtight seal.
Consume within 2 days.
