But how many ways can you cook chicken? Perhaps thousands! Being a highly versatile ingredient, it allows you to experiment in many culinary preparations. Let’s say that chicken, no matter how you prepare it, is always good and appreciated.

Personally, I like it a lot, but I enjoy eating it in quite varied ways, as long as it’s made tasty and delicious. Surely among the versions I prefer the most are the variants that include seasonings that make it richer and more pleasant to the palate.

This is the case with a chicken breast pizzaiola that I prepared in a quite simple way. Basically, I took some slices of chicken breast that I initially seared in a pan with butter and then finished cooking over low heat with tomato sauce.

To finish the dish, I let some tuma cheese melt in the last few minutes of cooking and finally served it on the plate accompanied by a sprinkle of chives.

Ingredients

  • 1.1 lbs slices of chicken breast
  • to taste flour
  • 1 tbsp butter
  • 1.5 cups tomato sauce
  • to taste salt and sugar
  • to taste fresh basil leaves
  • 5.3 oz tuma cheese
  • to taste chives

Steps

To make the chicken breast pizzaiola

  • First, flour all the chicken breast slices and place them on a plate before moving to the next stage.

  • Next, heat a sufficiently large saucepan and melt a knob of butter, which will allow you to sear the chicken.

  • At this point, once the butter has melted, sear the chicken slices on both sides. Don’t worry if the cooking is only superficial, as it will be properly completed in the following stages.

  • Meanwhile, pour the tomato sauce into a bowl and season it to taste with salt, sugar, and a few fresh basil leaves. Mix well and set it aside for a moment before moving on to the next step.

  • For this step, pour all the seasoned tomato sauce over the chicken, making sure to cover the entire surface. Cook over very low heat with the lid on for about 30 minutes.

  • In the meantime, take the tuma cheese and slice it not too thinly using a sharp smooth-bladed knife and a cutting board. Set aside until the last part of the recipe.

  • Finally, after the necessary cooking time has passed, remove the lid and ensure that the tomato sauce has thickened. Proceed by placing all the slices of cheese on the surface and put the lid back on, leaving it to cook for a few more minutes until the tuma melts.

  • To complete, place a portion of chicken pizzaiola on a plate and let it rest for a few minutes before serving. As a final touch, garnish with a sprinkle of chives and a few fresh basil leaves.

Tip!

During cooking, make sure the chicken doesn’t burn in contact with the pan. Since the cooking doesn’t require stirring, lower the heat even further if necessary.
