Chicken Bruschetta

When it comes to chicken, it is known to be one of those ingredients with which you can make “millions” of recipes. Personally, since I started this blog, I have proposed some such as hunter-style chicken, a great classic, but also more exotic recipes like teriyaki chicken with shiitake mushrooms (a must-try!)

This recipe was born, as often happens, from an idea of my wife who regularly inspires me to create new recipes. The need was to find a quick solution while also using the ingredients available at home. Upon making a quick selection, we discovered we had chicken and cherry tomatoes, so we thought of making a kind of bruschetta to then place on the chicken.

The process for making this dish is extremely easy and quick and most importantly requires only 2 main ingredients. Basically, just make a diced seasoned cherry tomato mix with oil and salt, which we will use to garnish the entire surface of the grilled chicken slices.

At first glance, it may seem simple, but I assure you that the taste is extremely pleasant, fresh, and light. So, if you want to try this interesting recipe, follow all the steps I will illustrate below!

Ingredients

For the chicken bruschetta

  • 1 1/3 cups cherry tomatoes
  • 4 slices chicken breast
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste sage
  • 1 clove garlic

Steps

For the chicken bruschetta

  • First, dice the cherry tomatoes with a sharp knife

  • Next, place the tomatoes in a large bowl and season with extra virgin olive oil and salt, then mix everything with a spoon

  • Continue by taking a clove of garlic and chopping it using a sharp knife, then add it to the bowl with the tomato and mix

  • At this point, take a non-stick pan and heat a drizzle of extra virgin olive oil over medium heat. Proceed by laying the chicken breast slices and roast them for about 10 minutes, cooking both sides. Also, add salt while cooking

  • To finish, place the chicken slices on a plate and top them with the generous tomato seasoning previously created. Garnish with pepper and sage, and you’ll have chicken bruschetta ready to serve at the table!

Tip!

To season the tomato bruschetta, you can also use fresh basil or mint to give the dish an even fresher aroma.
