Cold Pasta with Feta and Cherry Tomatoes

During the hot season, you know, you always prefer something cold! In this case, cold pasta is a delightful alternative for a meal, like lunch or dinner, hoping to find some relief against the heat typical of summer months.

This recipe is ideal both at home and for a trip to the mountains or the sea. Personally, I don’t even mind it in winter as I often eat it when I don’t have much time to cook. In this version, I was inspired a bit by Greek cuisine using one of the most famous ingredients of the Hellenic country, which is feta cheese accompanied by cherry tomatoes, olives, and extra virgin olive oil achieving a really fresh and satisfactory result.

The preparation is very easy, requires no skills, and is done in no time! Besides, you don’t even need to cook the dressings as everything is prepared cold!

Ingredients

For cold pasta with feta and cherry tomatoes

  • 3.5 oz feta cheese
  • 5.3 oz cherry tomatoes
  • 1.8 oz olives
  • to taste salt
  • to taste extra virgin olive oil
  • 7.1 oz pasta
  • to taste pepper
  • to taste chopped parsley

Steps

To prepare the cold pasta with feta and cherry tomatoes

  • First of all, put the water with salt on to boil in a pot, then drop the pasta in and cook it for the time indicated on the package or to the desired level.

  • Meanwhile, cut the feta cheese into cubes and set aside in a large salad bowl. You can also use pre-cubed feta to save the cutting effort.

  • Similarly, chop the cherry tomatoes, quite unevenly, and add them to the salad bowl along with green olives, salt, and extra virgin olive oil, then gently mix everything.

  • Next, drain the pasta and cool it under running water to stop the cooking. Then, mix it in with the other prepared ingredients in the salad bowl.

  • Finally, add a drizzle of extra virgin olive oil and gently mix until all ingredients are combined.

  • To finish, place a portion of pasta on the plate, garnish with pepper, fresh chopped parsley, and serve at the table!

Tip!

Consider that you can use different types of olives or cherry tomatoes. The cold pasta can be stored in the fridge for about 2 days.
