Exotic Basmati Rice with Chicken

This is one of those times when inspiration for creating something different comes to me as I cook. I start without following any recipe because the essence of my cooking is fundamentally this!

On occasions like this, I increasingly realize that cooking is a boundless world where the only true limit is one’s own imagination combined with the personal skills one possesses.

For this dish, I started with an idea of ethnic origin with a base of basmati rice flavored with turmeric and surrounded by vegetables, legumes, and chicken.

The final result was very positive and fresh, ideal for warmer seasons like summer.

Ingredients

For the exotic basmati rice with chicken

  • 2 cups Basmati rice
  • to taste turmeric
  • to taste salt
  • to taste extra virgin olive oil
  • 14 oz chicken breast
  • to taste ground cinnamon
  • to taste nutmeg
  • 1/4 cup beer
  • juice of 1 lemon
  • 1.75 oz green beans
  • 1 can great northern beans
  • 1 can corn
  • to taste dill

Steps

To prepare the exotic basmati rice with chicken

  • First, weigh 2 cups of basmati rice and cook it in a pot of salted water for about 12 minutes. During cooking, also add 1/2 tablespoon of turmeric to the water.

  • Once the rice is cooked, drain it and let it cool at room temperature in a large bowl. Sometimes it’s also better to prepare it several hours in advance to improve the final cooking in the wok.

  • At this point, cook the green beans for about 35 minutes in a steamer. Meanwhile, take a wok and heat some oil. Once it reaches temperature, cook the chicken breast cut into cubes.

  • Next, add the salt, turmeric, curry, and nutmeg to the chicken. Continue cooking, stirring occasionally until all the flavors are well combined.

  • At this stage, add the beer to the pan and shortly after the lemon juice. Continue cooking on high heat until all the liquids have reduced, then turn off the heat and set aside.

  • To complete, heat some oil in the wok and add the rice along with the chicken, drained and rinsed great northern beans, cooked green beans, and corn. Stir-fry everything on high heat for a few minutes until all components are well mixed.

  • Finally, serve a portion of rice on a plate and garnish with a few pieces of chicken set aside and a nice sprinkle of dill!

Tip!

You can replace the beans with chickpeas or use other spices like cinnamon, garlic powder, or chives.
