Every time I made a hamburger sandwich at home, I always did it using ready-made industrial products found at the supermarket. I mean the classic round buns, the ones from fast-food restaurants. However, I had been interested for some time in trying an entirely homemade solution, so I dedicated myself to making buns using a base dough that I have already used on several occasions, I’m talking about brioche dough.
Thanks to this very versatile dough, it is really satisfying to complete recipes like the Palermo sheet pizza or the classic Palermo mignon pastries which, as you can tell from their names, are very popular in the Sicilian capital.
I then decided to try making buns, different from American buns, aware that I would achieve a completely satisfying result, as imagined. Soft consistency but at the same time substantial and not too crumbly like the packaged ones we are often used to.
The process involves making the dough and using essential ingredients such as lard, which gives the main characteristic to this type of bread. Then, it needs to rise for a few hours and finally be baked to get the best hamburger bun you can enjoy at home!

Ingredients
For 4 hamburger buns
- 2 cups all-purpose flour
- 1/2 cup water
- 1/2 oz fresh yeast
- 2 tbsp sugar
- 2 tbsp lard
- 1 tsp salt
- 1 egg yolk
- as needed milk

Steps
To make the hamburger buns
To start, pour the flour, water, yeast, lard, and sugar into the mixer
Proceed by kneading for 4 minutes, making sure to add the salt 1 minute before the end
Once the time is up, transfer the dough to a countertop and shape it into a ball; then place it in a bowl and cover with a cloth or plastic wrap, allowing it to rest for about 2 hours
After 2 hours, transfer the dough to a work surface, shaping it into a long form, then proceed to cut pieces weighing 3.5 oz each
Continue by shaping each piece into a round form and placing them one by one on a parchment-lined baking tray
At this point, place the tray inside the oven with the light on for about 1 and a half hours to allow the shapes to rise. Afterwards, take out the tray and brush the buns with a liquid made of an egg yolk and a bit of milk
Finally, set the oven to 356°F and once it reaches the temperature, bake for about 20 minutes
To complete, remove your buns and let them cool slightly before slicing and dressing them as you like!
Tip!
During baking, frequently check the browning level of the buns, sometimes 15 minutes may be enough.
