Ingredients

  • 1 cup milk
  • to taste sweet paprika
  • to taste ground turmeric
  • to taste nutmeg
  • to taste curry powder
  • to taste garlic powder
  • to taste ground ginger
  • to taste salt
  • to taste pepper
  • 0.88 lbs chicken breast, diced
  • 2 eggs
  • 1.6 cups all-purpose flour
  • 1.6 cups semolina
  • 2 cups vegetable oil
  • to taste barbecue sauce

Steps

  • Pour the milk into a bowl and add paprika, turmeric, nutmeg, curry, garlic powder, ginger, salt, and pepper

  • Mix everything and add the chicken pieces, cover and marinate in the fridge for at least 8 hours

  • Beat the eggs in a bowl and add salt, garlic powder, and paprika

  • In 2 separate bowls, place the flour and semolina

  • Drain the chicken from the marinade and dip it first in the egg, then in flour, again in the egg, and finally in semolina

  • Repeat the entire previous step to achieve an even crunchier coating

  • Heat the oil and bring it to approximately 356°F measuring the temperature with an infrared thermometer

  • Fry the pieces a few at a time for 5 minutes

  • Place the fried chicken pieces on absorbent paper and add salt

  • Serve the fried bites accompanied by barbecue sauce or other sauces of your choice

Tip!

For optimal marination, it’s better to leave it in the fridge overnight, and for a better result, use buttermilk instead of milk.
