- 1 cup milk
- to taste sweet paprika
- to taste ground turmeric
- to taste nutmeg
- to taste curry powder
- to taste garlic powder
- to taste ground ginger
- to taste salt

- 0.88 lbs chicken breast, diced
- 2 eggs
- 1.6 cups all-purpose flour
- 1.6 cups semolina
- 2 cups vegetable oil

Steps
Pour the milk into a bowl and add paprika, turmeric, nutmeg, curry, garlic powder, ginger, salt, and pepper
Mix everything and add the chicken pieces, cover and marinate in the fridge for at least 8 hours
Beat the eggs in a bowl and add salt, garlic powder, and paprika
In 2 separate bowls, place the flour and semolina
Drain the chicken from the marinade and dip it first in the egg, then in flour, again in the egg, and finally in semolina
Repeat the entire previous step to achieve an even crunchier coating
Heat the oil and bring it to approximately 356°F measuring the temperature with an infrared thermometer
Fry the pieces a few at a time for 5 minutes
Place the fried chicken pieces on absorbent paper and add salt
Serve the fried bites accompanied by barbecue sauce or other sauces of your choice

For optimal marination, it’s better to leave it in the fridge overnight, and for a better result, use buttermilk instead of milk.
