As I have written in similar recipes, when it comes to rolls there are no excuses! Everyone likes them no matter how they are presented. The reason they are irresistible is because we know inside we will find a filling that is sometimes unknown and therefore creates that extra curiosity for those who eat them.
Moreover, the roll can be intriguing due to the multiple variations with which it can be created. In this version of mine, I used thin slices of chicken breast and for the filling, I recreated a mixture with sandwich bread, lemon juice, caciocavallo cheese, and fresh mint.
For the assembly, I arranged the rolls on a skewer alternating slices of onion and lemon to give a strong and irresistible flavor. I cooked them in a saucepan greased with oil until the surface of the meat was browned to the point of making them similar to a grill cooking.

Ingredients
For the lemon chicken rolls
- 5 slices sandwich bread
- 7 oz caciocavallo cheese
- juice of 1 lemon
- 3 tbsp extra virgin olive oil
- to taste chopped fresh mint
- 1 lemon, sliced
- 1 onion
- 14 oz thinly sliced chicken breast
- to taste salt

Steps
To make the Lemon Chicken Rolls
First, take the slices of sandwich bread and chop them in a food processor
Then, transfer the chopped bread into a bowl and add cubed caciocavallo cheese, lemon juice, oil, and chopped mint, then mix everything together to combine
Next, thinly slice a lemon. Then, take the onion, cut it in half, and separate the various layers to obtain concave slices
For the next step, lay a slice of chicken breast on a surface, roll a portion of filling in your hand, place it at the beginning of the slice, and roll it up to create the roll
Continue in the same way until all slices and filling are used up, placing all the rolls on a tray
At this point, take a wooden skewer and thread in order, first the roll, then a slice of onion and a slice of lemon, then repeat the operation placing about 4 rolls on the whole stick
To finish, heat a greased pan or griddle and cook your skewers over medium heat, on both sides. Add a pinch of salt and turn several times to ensure even cooking until the rolls are well-browned
Finally, serve your rolls on a serving plate accompanied by your preferred side dish
Tip!
Instead of caciocavallo, you can use alternative cheeses as long as they are salty enough.
