They originated in Palermo a few decades ago, effectively enriching the variety of meats generally chosen for barbecues. They have now become very popular even outside the capital thanks to their taste and simplicity.

The mangia e bevi are true finger foods that are eaten strictly with plenty of lemon and salt and they also remind a bit of ‘stigghiòla’. They are simply made of a thin slice of bacon rolled around a scallion and then grilled.

In this case, having had a sudden craving, I had to cook them in an air fryer simply because I couldn’t set up a barbecue at home, and I must say the result was not bad at all! It took me really little time to assemble them and finally cook them.

Ingredients

  • thin slices of bacon
  • whole fresh scallions
  • to taste salt
  • to taste lemon

Steps

  • To start, take the whole scallions and remove most of the sprouts, leaving only a few inches

  • At this point, wrap a slice of bacon from the base of the scallion to the top

  • In the same way, continue wrapping all the slices around the scallions until all ingredients are used, placing them gradually on a platter

  • To continue, place all the ‘mangia e bevi’ inside the basket of an air fryer and cook for 15 minutes at 320°F and for another 5 minutes at 356°F

  • To complete, remove the cooked ‘mangia e bevi’ and place them on a cutting board. Cut them into pieces and season with plenty of salt and lemon juice before serving

Tip!

Serve them while still hot, and if you have the chance to cook them on a barbecue, don’t miss the chance.
