Pancakes with Dried Fruits

Ingredients

  • 1 cup all-purpose flour
  • 7/8 cup milk
  • 2 tbsp butter
  • 1 tbsp sugar
  • 2 eggs
  • 1 1/4 tsp baking powder
  • 1 pinch salt
  • maple syrup
  • dried fruits of choice

Steps

  • Separate the egg whites from the yolks. Whisk the egg whites with sugar using an electric mixer or a stand mixer with a whisk attachment.

  • Melt the butter over low heat and set it aside to cool.

  • Beat the yolks with a hand whisk and add to the mixture, the melted butter, milk, flour together with baking powder, and a pinch of salt.

  • Fold the whipped egg whites into the mixture, stirring from bottom to top with a spatula until fully incorporated.

  • Melt a small amount of butter in a non-stick pan over medium heat.

  • Place 2 1/2 tablespoons of the mixture onto the pan and wait for bubbles to appear on the surface. Then flip the pancake with a spatula and cook for about 60 seconds. Place your pancake on a plate and continue making the rest.

  • Garnish your pancakes first with maple syrup and then with your preferred dried fruits. You can also stack them and garnish layer by layer.

Tip!

Use the milk you prefer according to your needs. For example, I used lactose-free milk for better digestibility. As a garnish, you can use honey instead of maple syrup.
