How good is pasta with fried zucchini? Personally, it drives me crazy! Especially in the summer when we try to eat mostly simple and unprocessed foods. In this case, we have a fresh and delicious pasta dish made up of just 2 ingredients.
In my life, thanks to my mother, I’ve always eaten this exquisite dish in the traditional way, with white zucchini from Trieste fried in hot oil. Here, however, I wanted to dare by changing the classic frying with air frying.
I’m honest, it’s not the same thing! However, it’s certainly a very valid alternative for those who want to avoid frying for various reasons. Whether it’s for the effort, or to avoid the persistent smell in the house, you can use this method and still enjoy a great result!
The preparation is really simple, you just need to cut the zucchini into cubes, oil them well with extra virgin olive oil, and cook them in the air fryer for about 30 minutes. Finally, when draining the pasta, combine everything and don’t forget to garnish the pasta dish with plenty of pepper and parmesan!

To start, get a moderately sized white zucchini from Trieste, wash it under running water, and dry it thoroughly.
Next, remove the 2 ends and cut the zucchini into round slices about 0.4 inches thick using a smooth-bladed knife and a cutting board.
Proceed by cutting each round into zucchini cubes, taking care to create pieces of approximately equal size to ensure even cooking.
At this point, transfer all the zucchini cubes into a large bowl, drizzle with extra virgin olive oil, and mix to coat all the pieces well.
Now, place all the oiled cubes inside the air fryer basket and set it to 365°F for 30 minutes. Halfway through cooking, be sure to ‘shake’ the cubes by ‘tossing’ with the basket.
After the time has elapsed, you can remove the basket. The goal is to achieve a zucchini that is sufficiently cooked and roasted, which you can transfer to a plate while waiting for the next step.
To finish, drop the pasta into salted boiling water and cook for the necessary time. Once cooked, drain the pasta and return it to the pot used, then add 3/4 of the zucchini cubes.
Finally, mix everything and serve the portion of pasta on the plate. Complete by garnishing with the remaining cubes and sprinkle with plenty of pepper and, if you like, a drizzle of raw extra virgin olive oil.
