Potato and Green Bean Salad

I preferred to keep the title short, but in reality, I should have written potato, green bean, onion, and tomato salad since this delicacy combines all these ingredients. Yes, this salad is a delicious side dish that pairs with almost anything! With meat, with chicken, or maybe next to an omelet.

Since childhood, I’ve had the chance to appreciate this salad because my mom used to prepare it very often. Today, I find myself making it personally, trying to recreate the same homely taste. My mom used to boil the vegetables to prepare it, but in this recipe, I decided to use steaming.

So making it is really simple, just cook the potatoes, green beans, and onions, then finally assemble them together by adding tomato, oil, vinegar, and a bit of oregano, salt, and pepper. In the end, you’ll have a perfect side dish that can really please everyone.

Ingredients

For the potato salad

  • 2.2 lbs potatoes
  • 10.5 oz green beans
  • 4 white onions
  • 4 tomatoes
  • 1 tsp salt
  • 2 tbsps apple cider vinegar
  • as needed extra virgin olive oil
  • as needed dried oregano
  • as needed pepper

Steps

To make the potato salad

  • First, turn on the steamer and cook the green beans along with the peeled and halved onions for 30 minutes. Place them on the same rack as both vegetables have the same cooking time.

  • Likewise, cook the halved potatoes on another rack of the steamer for 40 minutes. I decided not to peel them before cooking, but you can choose otherwise.

  • Next, set aside all the cooked vegetables and let them cool completely at room temperature. Once cooled, peel the potatoes and cut them into rather irregular pieces.

  • For the onions, similarly, cut them with a knife to separate all the layers of the onion itself.

  • At this point, take a very large bowl and put in the potatoes, green beans, onions. Also, add the raw tomatoes, also cut into irregular pieces.

  • To finish, season with extra virgin olive oil, apple cider vinegar, and salt. Gently mix everything until all the ingredients are well combined. Finally, serve at the table and season to taste with oregano and pepper.

You can store it in the fridge for 3 days, I assure you it will get tastier as the days go by!
