Sausage with Sauce and Potatoes

On Fat Tuesday, in my area, it is customary to have sausage with sauce and potatoes for dinner. Being a Palermo tradition, I’ve often heard it called “a sasizza cu sucu” or “a sasizza ru nannu“. It’s a dish that, besides being celebrated at the end of carnival, is consumed throughout the year, perhaps a bit less in summer.

The preparation of my version is very simple since it requires only 4 ingredients and has an overall straightforward procedure that anyone can follow. You just need some sausage, an onion, some potatoes, and tomato sauce. Then just cook for about 50 minutes on medium heat to complete this fantastic, very hearty and satisfying dish. Finally, it is essential to eat it accompanied by soft bread and dip it continuously into the sauce with every bite!

  • 10.5 oz potatoes
  • 1 onion
  • 2 bottles of tomato sauce
  • 12.3 oz sausage

Steps

To prepare the sausage with sauce and potatoes

  • First, peel the potatoes and wash them, then cut them into irregular pieces and set aside

  • Next, finely dice the onion and then sauté it in a large pot with some extra virgin olive oil

  • Then add 2 bottles of tomato sauce along with some water that you will use to “rinse” the inside of the bottles

  • Continue adjusting with salt and, if you like, with sugar to eliminate acidity, and at this point, also add the potatoes

  • As the last ingredient, add the sausage cut into pieces, and after a good stir, cook on medium-low heat with the lid on for about 50 minutes

  • Finally, after the cooking time, plate a nice portion of sauce and potatoes along with the sausage and serve

Tip!

Accompany this dish with some bread to dip into the sauce for an irresistible scarpetta.
