Ingredients
- 2 sheets puff pastry
- 9 oz fresh spinach leaves
- 7 oz asiago cheese
- to taste salt
- to taste extra virgin olive oil
- to taste grated parmesan
- 1 egg yolk
Steps
Roll out the first sheet of puff pastry in a baking pan using the parchment paper already provided in the package as a base
Cover the entire surface with half of the spinach leaves, add a pinch of salt, a drizzle of olive oil, and half of the asiago cheese in pieces. Also, add a sprinkle of grated parmesan
Form another layer with the remaining spinach leaves and repeat the same process: pinch of salt, oil, asiago, and finally a sprinkle of parmesan
Close the pie with the second sheet of puff pastry, making sure to seal the edges well by joining the bottom part with the top
Prick the entire surface with a fork to prevent swelling during baking. Then brush with the egg yolk
Bake in a preheated oven at 350°F for 30 minutes, placing the rack at mid-height or slightly above
At the end of baking, remove the pan from the oven and let your savory pie rest for a few hours before consuming
Tip!
You can also use alternative cheeses like fontina. Avoid consuming the savory pie right out of the oven. If the spinach seems too voluminous at first, don’t worry because during baking they will lose much of their volume.
