When you crave something light yet very tasty, our thoughts often turn to salads, but it’s rare to think of something extremely delicious.
For this reason, in recent years, salads have been presented in a slightly more elaborate way to make them appetizing without being too heavy. There are indeed countless combinations with which to elaborate a salad using various proteins such as chicken, fish, meat, and cheeses sometimes accompanied by seeds and nuts.
In this recipe, I propose a not too complicated salad made with a base of mixed lettuces and julienned carrots, then dressed with a yogurt dressing and topped with seared shrimp and garnished with cranberries, pistachios, and dill.

Ingredients
For the shrimp salad
- 5 shelled shrimp
- as needed extra virgin olive oil
- as needed mixed lettuce
- as needed yogurt dressing
- 1 carrot
- as needed dried cranberries
- as needed chopped pistachios
- as needed dill

Steps
To make the shrimp salad
First, heat a little extra virgin olive oil in a non-stick pan, then sear the shelled shrimp for 5 minutes on both sides
Next, place the mixed lettuce in a large bowl to form the base for the salad
Then dress the base with the yogurt dressing in a circular motion to cover the entire surface
Then add the julienned carrot and sprinkle with additional yogurt dressing
Finally, place the shrimp all over the surface and garnish with cranberries, chopped pistachios, a drizzle of oil, and a sprinkle of dill
Tip!
Instead of the yogurt dressing, you can also use low-fat yogurt. As for the lettuce, feel free to use whichever type you prefer.
