I have always loved ethnic flavors, far from our Mediterranean culinary culture, and among these are certainly oriental dishes although very often known in westernized variants.
I know for sure that many of the dishes we generally taste in Asian restaurants in Italy are remodulated or even invented to make them appealing and suitable for European culture. Nevertheless, over the years I have had the opportunity to discover many fantastic dishes and one of them is the one I propose to you today, namely soy vermicelli with vegetables and shrimp.
They are simple to prepare, it only takes a few minutes to prepare all the necessary ingredients and a series of simple steps to create this delicacy that will properly tease your palate.

Ingredients
For the soy vermicelli with vegetables and shrimp
- 3.5 oz soy vermicelli
- 5 dried shiitake mushrooms
- 1 zucchini
- 1 carrot
- 2 shallots
- to taste vegetable oil
- 5 shelled shrimp
- 1 cup soy sauce

Steps
To make the soy vermicelli with vegetables and shrimp
First, heat a pot half-filled with water and turn off the heat just before boiling. Immerse the rice vermicelli and soften for about 10 min
Similarly, heat a cup of water bringing the temperature to pre-boil in a small saucepan, then immerse the dried shiitake mushrooms and let them soften for about 10 minutes
Meanwhile, slice the zucchini into oblique slices and then cut into small sticks forming an oriental-style julienne cut. Proceed similarly by cutting the carrot
As for the shallots, you can cut them into slices, then mix all the vegetables in a bowl as you cut them. Proceed to cut the now rehydrated mushrooms, removing the sometimes hard and woody stem
Next, heat the vegetable oil in the wok over medium-high heat and stir-fry all the vegetables together, except the mushrooms, for a few minutes
Continue by adding the shrimp and mushrooms and continue stir-frying for a few minutes, then add the drained rice vermicelli and soy sauce, continuing to mix everything
To finish, take a bowl or a plate and place your vermicelli ready to be enjoyed. Finally, garnish with soy sauce
Tip!
If you are not very manual with timing, I recommend starting with cutting the vegetables before soaking the vermicelli, thus avoiding making them too soft.
