The spinach rice roll is a leftover recipe made with risotto left over from the day before. Personally, I used the leftover rice for making Palermo-style rice balls. A well-executed experiment that satisfied me a lot, especially for the crunchiness of the surface given by cooking in an air fryer!

Ingredients
- 10.5 oz rice for rice balls (recipe in steps)
- 5.25 oz spinach
- 5.25 oz diced cooked ham
- 5.25 oz buffalo mozzarella

Steps
First, place a sheet of parchment paper on a surface
Next, take the rice for the rice balls from the fridge and flatten it on the parchment paper (recipe for rice balls)
Create a uniform layer across the entire surface
Then, cook the spinach and drain them very well, removing as much water as possible
Place the spinach on the rice layer to cover the entire width
Then add the diced ham and slices of buffalo mozzarella on top of the spinach
Finally, roll everything up by taking an edge of the parchment paper and forming a roll
To finish, cook in an air fryer for about 40 minutes at 374°F
Tip!
In summary, if the roll is too large to cook in an air fryer, you can divide it into smaller parts.
