  • 2 leeks
  • 14 oz turkey
  • to taste all-purpose flour
  • to taste extra virgin olive oil
  • to taste salt
  • 1/4 cup white wine
  • to taste sage

To prepare Turkey Scaloppine with White Wine

  • Start by washing the leeks under running water, then dry them well with a cloth and cut them into slices about 1/4 inch thick.

  • Next, take the turkey slices and cut them into fairly irregular pieces with a sharp knife with a smooth blade.

  • In the meantime, heat a base of extra virgin olive oil in a non-stick pan and stew the leeks by adding 1/4 cup of water and a pinch of salt. Continue cooking with the lid on over moderate heat for about 12 minutes or until the leeks are well cooked.

  • Continue by heating a drizzle of extra virgin olive oil in a saucepan and browning the floured turkey pieces. Once the turkey is browned, add the salt, wine, and sage, cooking over medium heat until the liquid has thickened. If necessary, add small portions of water.

  • To finish, keep an eye on the cooking until you notice the result is creamy in consistency, then you can turn off the heat.

  • Finally, take a small baking dish and arrange the stewed leeks as a base. Add the scaloppine on top and garnish, if you wish, with sesame seeds before serving.

You can also add a clove of garlic in its skin with the leeks if you prefer.
