Puff pastry fans, very simple and quick cookies, known in many countries around the world, perfect to accompany a cup of tea. They have different names in every language: in Spain they are called “palmeritas” and in English and French they are known as “palmiers”. They are generally associated with palms, but also with hearts and ears.
They are nothing more than sweets made with a layer of puff pastry, covered with sugar on top and bottom and then rolled to form two joined tubes. After a few minutes of rest in the refrigerator, the double roll is cut into slices, which form the cookies to be baked.
Today I present to you my version cooked in an air fryer. Just like in oven baking, in an air fryer each fan grows in height and width, giving it a fairly regular heart shape. Also, during cooking, the sugar caramelizes, thus giving a delicious crunchiness to these cookies.
For this recipe, I used rectangular puff pastry, but round pastry will also be just fine! If you love cinnamon and cocoa, you can also enrich the sugar with both and make these treats even more delicious. I stuck to the original version, which, by the way, I adore very much. Steps
Unroll the puff pastry and sprinkle a tablespoon of sugar across the entire surface. Press down with your hands so that the sugar adheres well to the pastry. Then, fold the two sides inward to create two strips 2 inches wide.
Sprinkle more sugar on the strips and fold them again towards the center, creating two tubes, whose edges should meet. Add another tablespoon of sugar and fold the two tubes over themselves.
Next, sprinkle the remaining sugar on both sides of the puff pastry. Roll it in parchment paper and place it in the refrigerator for 30 minutes, so that you can cut the slices perfectly.
Take the roll and cut it into slices 0.6 inches thick. Place the slices vertically in the fryer basket, spacing them apart. They will grow in width and height during cooking.
Cook in the fryer at 330°F for 10 minutes and for another 2 minutes at 350°F turning them over. The fans are ready when they are well browned on the surface. Let them cool and serve with a cup of tea.
Storage and Tips for Puff Pastry Fans
The fans can be stored in a cool, dry place for 3 or 4 days in a tin box.
