Apple and cinnamon muffins are delightful sweets perfect to serve with a cup of tea for a snack or breakfast. It’s a very simple recipe to make and you don’t even need to beat the eggs with an electric mixer.

- 2 3/4 cups all-purpose flour
- 2 eggs
- 5/8 cup sugar
- 2/3 cup milk
- 2 1/8 oz butter
- lemon zest (to taste)

- 1 packet baking powder

Steps
To make the apple and cinnamon muffins, you can choose whether to prepare them by hand or use a blender. First, melt the butter in the microwave and let it cool. Then, place the liquid components in a bowl: the eggs, the milk, and the melted and cooled butter, and start mixing with a hand whisk until all the ingredients are well combined.
Now add the sugar and combine it with the liquid components, still mixing with the hand whisk. Then incorporate the solid components: flour, baking powder, and ground cinnamon. Keep mixing with the whisk until you get a smooth, lump-free batter.
Elsewhere, clean the apples. Peel them, remove the core, and cut them into small pieces. Then add them to the mixture, stirring with a spatula or spoon.
Place the paper liners inside the muffin pan and fill them with a couple of tablespoons of batter, making sure to leave 1 cm of space from the edge because they will rise during baking and could overflow from the pan. If you prefer, you can do this with an ice cream scoop. Bake the muffins in a preheated oven at 356°F (180°C) with static function for 30 minutes. Of course, baking times may vary because not all ovens are the same. I recommend doing the classic toothpick test before removing them from the oven.
Apple and cinnamon muffins are ready! Take them out of the oven and let them cool on a rack. Add a dusting of powdered sugar and serve with a cup of hot tea.
