- 3/4 cup all-purpose flour
- 1/5 cup sugar
- 2 tsp baking powder
- 1 apple
- cinnamon powder (to taste)

Steps
First, place the egg in a mixing bowl with the sugar and milk and mix with a hand whisk until all the ingredients are well combined. Then add the flour, cinnamon, and baking powder and continue to mix with the whisk until the mixture is smooth and lump-free.
Separately, prepare an apple: peel it, remove the core, and cut it into very small cubes. It is important that they are small so they can cook perfectly. Alternatively, you can also grate it if you prefer. Add the apple pieces to the batter and stir with a spoon so they blend into the mixture.
Separately, heat a non-stick pan and pour a couple of tablespoons of batter, trying to spread it slightly. As soon as bubbles form, use a spatula to flip the pancake and cook on the other side. They should cook for 2 or 3 minutes on each side over low heat.
The apple and cinnamon pancakes are ready! Serve them with jam, maple syrup, or simply with a dusting of powdered sugar.

Apple pancakes can be stored for one or two days in a cool, dry place wrapped in food wrap. Alternatively, you can freeze them to thaw individually when needed.
