At home, muffins aren’t very popular, but apple cakes are much loved. This delicious cake is also perfect for ending a dinner or lunch with friends. No need for a mixer or electric beaters. You can work the batter with a spoon and a blender. Once all the ingredients are combined, bake it and enjoy its irresistible aroma during cooking. Ingredients

  • 2 eggs
  • 1/3 cup sugar
  • 1/3 cup milk
  • 3/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 tsp vegetable oil
  • 1 packet vanillin
  • 2 apples
  • 1 cup all-purpose flour
  • 1/3 cup butter (cold from the fridge)
  • 1/4 cup sugar
  • salt (a pinch)
  • ground cinnamon (to taste)

Steps

  • First, mix the eggs with the sugar and vanillin in a bowl with a hand whisk. Then add the flour, baking powder, milk, and oil, and continue mixing with the whisk until you get a smooth batter without lumps. Separately, clean the apples, peel them, remove the core, and cut them into small cubes. Add the apple cubes to the batter and mix everything well.

  • Transfer the batter into a 20 cm diameter cake pan lined with parchment paper. Now put the cold butter, flour, sugar, cinnamon, and a pinch of salt in the blender and blend until you get a crumbly mixture. Spread it over the cake’s surface, without pressing it and trying to cover the edges well.


    Bake the cake in a preheated oven at 356°F for 45 minutes, or until the surface is golden. Obviously, cooking times vary a lot depending on the type of oven you have. After baking, remove the cake from the oven and let it cool.

The apple cake with crumble can be stored in a cool, dry place for 3 or 4 days, covered with a glass dome or aluminum foil.
