Ingredients
- 4 artichokes
- cup breadcrumbs
- cup pecorino (grated)
- garlic powder (to taste)
- tbsp extra virgin olive oil
- chopped parsley (to taste)

Steps
First, clean the artichokes by removing the tougher outer leaves. For this recipe I did not use the stems, but you can use them to make a vegetable stock for a risotto. Next, cut the artichokes in half, remove the inner choke and cut them in half again. Then transfer them to a bowl with water and lemon to prevent browning.
Meanwhile, bring plenty of salted water to a boil in a saucepan and add the artichokes drained from the lemon water. Cook them for 6 minutes, until they are fairly tender. Take care not to cook them completely because they will finish cooking in the air fryer. This step only ensures they remain tender after air-fryer cooking.
Prepare the coating separately. In a bowl combine the breadcrumbs with 1/3 cup (about 25 g) of the grated pecorino taken from the total, the garlic powder, the chopped parsley and a little salt. Mix and set aside.
Drain the artichokes and transfer them to a bowl. Add the previously prepared coating and mix. Grease a 9 7/16 in baking dish and sprinkle the remaining pecorino. Arrange the artichokes in the dish and add a little more olive oil.
Cook in the air fryer at 320°F for 10 minutes, or until golden. Remove from the air fryer and serve.
