Steps
First, let’s prepare the mashed potatoes. Cook them first. I used the pressure cooker to shorten the cooking time. It’s very simple; I’ll explain how to proceed. Place the peeled and washed potatoes in the steam basket. Then put it in the pot, add cold water without exceeding the level of the basket, and close the pot, bringing it to maximum power.
Once it starts whistling, cook for 6 minutes. Meanwhile, heat the milk without bringing it to a boil and add pepper, nutmeg, and salt.
After the cooking time, open the pot and mash the potatoes with the potato masher in a basin. Gradually pour in the hot milk and stir so it gets absorbed by the potatoes. Then add the butter and 1 oz of grated cheese and mix again.
Now take an oven tray or baking dish and pour half of the previously prepared mashed potatoes. Add the diced mozzarella and ham and the remaining mashed potatoes. Spread the grated cheese on the surface and bake at 356°F (180°C) for 15 minutes or until the surface is golden.
The baked mashed potatoes are ready! Serve them still hot and melting.
Variations and Tips for Baked Mashed Potatoes with Ham and Cheese
Baked mashed potatoes can be stored in the refrigerator for one or two days in an airtight container. When reheated, it can also make a great lunch to take to the office for a work lunch.
You can replace the mozzarella with any other melting cheese you prefer. For a richer taste, you can use gorgonzola or taleggio.
