Soft and delicious, these cupcakes are made with a batter that includes eggs, butter, sugar, flour, and baking powder. Once baked and cooled, I filled them with chocolate ganache, making them even more delicious and irresistible.
The ears are simple cocoa biscuits, and the eyes are small sugar candies. Delicious and simple to prepare, these Halloween treats can also be made in advance. Ingredients
- 2 eggs
- 1/2 cup butter
- 2/3 cup sugar
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1 packet vanillin
- 3/4 cup whipping cream
- 5.3 oz dark chocolate
- 1 tbsp butter
- 6 cocoa biscuits
- 12 sugar eyes

Steps
First, take care of the cupcakes. Remove the butter from the refrigerator at least 30 minutes before to soften it. Then, work the butter with the sugar using electric beaters until you get a cream.
Then add the eggs one at a time, incorporating them with the electric beaters. Once the eggs are well mixed, add the flour, vanillin, and baking powder. Continue to work the mixture with the electric mixer until you obtain a smooth and homogeneous batter.
Place the baking cups in the muffin tin and fill them 3/4 full with the mixture, using an ice cream scooper or a spoon. Bake the Halloween treats in a preheated oven at 350°F with static function for 30 minutes. Check the cooking with a toothpick, which should come out dry.
After the cooking time, remove the treats from the oven and let them cool before removing them from the mold.
Meanwhile, while the cupcakes are baking and cooling, prepare the ganache. Chop the dark chocolate. Pour the cream into a saucepan and add the butter. Heat until it almost boils. Then add the dark chocolate and stir until melted. Transfer the cream to a mixing bowl, cover with plastic wrap, and refrigerate for at least 1 hour.
Then take the cream that has now set and blend it with the electric mixer to make it smooth.
Take the cupcakes and remove them from the mold. Put the ganache in a piping bag and pipe some onto the surface of the treats to form tufts. Halve a biscuit and place it on the sides of the cream to form the bat ears. Then place the sugar eyes on the cream.

Storage and Tips for Bat Halloween Cupcakes
I recommend filling the cupcakes only at the last minute, just before serving. You can prepare them in advance and store them in a dry place for 2 to 3 days covered with a glass dome. The cream, however, can be stored in the refrigerator for 1 to 2 days maximum, in a glass container with a lid.
