Bread crostini, one of the most delicious recipes for a home aperitif with friends and also perfect as an appetizer for special occasions. They are nothing more than a vegetarian version of the bruschetta with sausage and mozzarella recipe.
For this recipe I recommend not using sandwich bread, or pan bauletto: it would be too soft to hold the ingredients used. I used regular bread, like a loaf, which I toasted in the oven for a few minutes, just enough time to make it crunchy.
How to fill it? It’s very simple! The most important thing is to unleash your creativity, even based on your tastes. Lately, my husband and I particularly love roasted peppers. The evening I prepared these bruschettas we were just the two of us for dinner, so I immediately took the opportunity to prepare this delicious bruschetta. In addition to the air-fried roasted pepper, I added brie, but you can use any other melting cheese you like: scamorza, provolone, or mozzarella.

Ingredients
- 1 bread (loaf type)
- 1 red bell pepper
- 2.5 oz brie
- 2 tsp extra virgin olive oil

Steps
First, wash the pepper, dry it, and place it in the air fryer basket. Cook the pepper at 374°F for 20 minutes, turning it halfway through. It should be roasted and wrinkled. Let it cool and, in the meantime, take care of the bread. Cut the loaf in half lengthwise and drizzle with some olive oil.
Place the bread on a baking tray lined with parchment paper and toast it in the oven at 356°F with a fan setting for 5 minutes. Alternatively, you can use a pan, placing the bread in contact with the hot pan on the side where you applied the oil.
Take the pepper, remove the skin, stem, seeds, and inner filaments. Then cut it into strips 1 inch wide. Take the bread again, place the pepper strips and some slices of brie on each half.
Put back in the oven for 2 or 3 minutes until the cheese has melted.
