Breaded Chicken Skewers in Air Fryer

Breaded chicken skewers, an easy, tasty, and quick main dish for an everyday dinner or last-minute guests. It’s an alternative to the breaded veal skewers, equally delicious and perfect for any time of the year.

For this recipe, I made rolls with chicken breast slices, which I filled with pancetta and rolled into rolls. They are then skewered on wooden sticks and passed in a mixture of breadcrumbs, grated pecorino, and rosemary. Cooked in an air fryer, but you can also cook them in the oven by extending the cooking time, or in a pan with a bit of oil. You can also replace the rosemary with other herbs of your choice: sage, thyme, marjoram, or parsley. If you like, you can also add minced garlic.

Golden and crispy on the outside, tender and tasty on the inside, these chicken skewers can be accompanied by baked potatoes, grilled vegetables, or fresh salad. Ingredients

  • 14 slices chicken
  • 7.05 oz pancetta (sliced)
  • 1 tbsp extra virgin olive oil
  • 1 cup breadcrumbs
  • 3 oz pecorino (grated)
  • 1 tsp rosemary (fresh or dried, minced)

  • Air fryer
  • Plate
  • Cutting board

Steps

  • Place the first slice of chicken breast on a cutting board and overlap two slices of pancetta side by side. Then roll the meat to form a roll. Proceed in this way with all the chicken slices. Skewer 2 or 3 meat rolls at a time on two wooden skewers and cut them in half to form small chicken rolls.

    Put the breadcrumbs, grated pecorino, and minced rosemary in a plate and mix. I used dried rosemary, but you can also use fresh rosemary, or replace it with other herbs of your choice.

    Brush the rolls on all sides with oil and pass them in the previously prepared coating, making sure it adheres perfectly. Then place the rolls in the air fryer basket and cook at 365°F for 18 minutes, turning them halfway through cooking.
