- 1.1 lbs Savoy cabbage
- 14 oz oz potatoes
- 2 fresh spring onions
- 14 oz oz canned borlotti beans
- 1 clove garlic
- 5.8 oz oz tomato puree
- 1 1/4 cups cups water
- 1 stock cube
- sage (to taste)
- rosemary (to taste)
- pepper (to taste)

Steps
First, bring the water to a boil. Clean the cabbage, removing the more damaged outer leaves, and cut it into strips. Rinse it under running water and drain. Peel the potatoes, wash and cut them into chunks. Then clean the spring onions, slice them, and finally peel the garlic clove.
Sauté these in the pot with the oil over low heat for a few minutes. Then add the potatoes and cabbage. Pour in the tomato puree, hot water, stock cube, and a pinch of pepper. Add the aromatic herbs: fresh sage and rosemary, but dried ones will also work, and close the pot, bringing it to maximum power.
From the start of the whistle, cook for 5 minutes over low heat. Obviously, cooking times vary based on the type of pressure cooker you have. After the cooking time, gradually release the steam and open the pot. Add the pre-cooked and drained beans and stir until well combined. If using dry beans, soak them for at least 12 hours and add them when you add the cabbage and potatoes.
The cabbage and bean soup in a pressure cooker is ready! Serve it with slices of bread toasted for a few minutes on the grill.
