Ingredients

  • 2 1/4 cups all-purpose flour
  • 5/8 cup water (at room temperature)
  • 2 tbsp granulated sugar (plus more for the final coating)
  • 2 1/2 tsp baking powder
  • 1 tbsp vegetable oil
  • orange zest (to taste)
  • salt (a pinch)
  • vegetable oil (for frying)

Steps

  • First, put the flour and baking powder in a bowl. Then add the pinch of salt, grate the zest of a possibly untreated, washed, and dried orange, and add it to the rest of the ingredients in the bowl.

    Mix and then add the sugar, part of the water, and mix again. Then pour in the remaining water, the vegetable oil, and start kneading first with a spoon and then on a pastry board with your hands. The dough will stick a bit, which is normal, as it will help the fritters remain soft after cooking. You can help yourself by spreading a little flour on the board, but make sure to use just a little, just enough to get a smooth and homogeneous dough. Form a ball and let it rest for about ten minutes, covering it with the bowl you used to prepare the dough earlier.

  • After the resting time, which will help relax the dough and make it more elastic, form a roll and divide it into 6 pieces. Dust the board with a little flour, just enough to prevent the dough from sticking, and flatten each piece with your fingers into a round shape.

    Separately, heat plenty of oil in a non-stick frying pan and, once it has reached temperature, dip the first fritter. To know if the oil is hot enough, dip a skewer. If it bubbles, it’s time to fry. With the help of a spoon, pour a little oil over the surface of the fritter and cook on low heat for a couple of minutes. As soon as you see that the bottom is golden, turn the fritter over with a slotted spoon and fry on the other side.

    Once the fritters are well golden, drain them on absorbent paper and pat them dry very well. Then place plenty of granulated sugar on a plate and pass the fritters one by one, making sure to shake off the excess sugar.
