Ingredients

  • 1 egg
  • 3.5 oz carrots (about 1 cup grated)
  • 1/4 cup sugar (erythritol)
  • 1 1/3 tbsp vegetable oil
  • 1/3 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • lemon zest (to taste)
  • powdered sugar (to dust)

Steps

  • First, clean the carrots, remove the ends, peel them and rinse under running water to remove any soil. Then cut them into pieces and transfer them to the blender. Add the egg, the sugar, the oil and the zest of one untreated, washed lemon. Start blending and then add the all-purpose flour, the almond flour and the baking powder. Blend again until you obtain a smooth, homogeneous batter.

    Pour the batter into the ramekins, leaving about 3/4 inch from the edge, because they will rise during cooking. Cook in the air fryer at 352°F for 15 minutes, and perform the toothpick test before removing them to check for doneness.
