Chicken Tikka Masala, a Delicious Ethnic Main Course

The chicken tikka masala is a typical dish of Indian cuisine, ideal to serve as a main course or as a second course. Although its origins are predominantly Indian, the chicken tikka is considered one of the typical dishes of British cuisine. Whether it is a British or Indian dish, this recipe is delicious and also ideal for a themed dinner with friends.

The preparation is very simple and although it requires a few hours of meat marination, I assure you it is really worth preparing. There is no official version, but different versions can be found, and today I propose mine. It is a recipe based on chicken pieces marinated in a yogurt and spice sauce, then baked and added to an orange sauce. This sauce is made with tomato puree and cream and flavored with garam masala, a typical Indian spice mix. In short, a dish rich in flavors and very particular not only in taste but also in appearance. You can accompany the chicken tikka masala with chapati bread, or with pilaf rice. Ingredients for Chicken Tikka Masala

  • 1 pack chicken (breast)
  • 150 ml Greek yogurt
  • ginger powder (or fresh to taste)
  • 1 tsp garam masala
  • smoked paprika (to taste)
  • 2 cloves garlic
  • 1/2 lemon (juice)
  • 1 cup oz tomato puree
  • 1/4 cup oz fresh liquid cream
  • 1/2 g white onion
  • 1 clove garlic
  • 2 tsp extra virgin olive oil
  • 1 tbsp brown sugar
  • 1 tsp turmeric powder
  • 1 tsp cumin
  • smoked paprika (to taste)
  • 1 fresh chili
  • 1 tsp coriander powder
  • coriander (to taste, chopped fresh)

Steps

  • First, wash the chicken breast and pat it dry with kitchen paper towels. Then cut it into pieces and transfer them into a bowl. Separately, chop the cleaned garlic cloves, removing the less digestible inner part, and put them in a bowl with the Greek yogurt, garam masala, paprika, dry ginger, and lemon juice. Alternatively, fresh ginger can be used by grating it with a fine grater.

    Mix all the ingredients and transfer them to the bowl with the chicken; stir again so that the pieces blend perfectly with the marinade and let it rest, covered with plastic wrap, for at least 1 hour in the refrigerator.

    After the marination time, take the chicken pieces and transfer them to a baking tray lined with parchment paper; bake at 400°F (200°C) for 25 minutes or until a crust forms on the surface.

  • Meanwhile, prepare the sauce. Clean an onion and chop half of it. Also chop the garlic clove after peeling it and removing the less digestible inner part. Do the same with the chili and sauté them for a few minutes in a non-stick pan with the oil.

    Add the paprika, cumin, turmeric, coriander, and toast for a few minutes over low heat along with the chopped onion, garlic, and chili. Then add the tomato puree and brown sugar and continue cooking for 10 minutes, covering with a lid. After cooking, add the cream, cooked chicken, and fresh coriander. It can also be replaced with chopped parsley.

Variations and Tips

Chicken tikka masala can be stored for one or two days in the refrigerator in a container with a lid.

Instead of cream, you can also use plain or Greek yogurt. Additionally, the chicken breast can be grilled and replaced with chicken thighs.
