Chimichurri Sauce, Traditional Argentine Recipe

The chimichurri sauce is a very simple and tasty condiment, used to season grilled meats in many South American countries. A variant of our green sauce recipe, usually used to accompany boiled meat.

Unlike our typical Piedmontese recipe, Argentine chimichurri is prepared with 3 main ingredients: parsley, garlic, and chili pepper. In addition to these, other spices can be added at will. In today’s version, I used smoked paprika and oregano.

Ingredients

  • 0.53 oz parsley (fresh)
  • 2 chili peppers (fresh or small dried)
  • 2 cloves garlic
  • 0.53 oz vinegar (white)
  • 1.41 oz extra virgin olive oil
  • 2 tbsp dried oregano
  • smoked paprika (to taste)
  • salt (to taste)
  • pepper (to taste)

Steps

  • First, clean the parsley and wash it very well. Then drain it and dry it with paper towels or a cloth. Make sure it is very dry, otherwise, it will oxidize. Chop it finely with a knife and transfer it to a bowl.

    Clean the garlic cloves, remove the inner part, and crush them with a garlic press. Then add the garlic to the bowl with the parsley and also add the oregano, paprika, salt, and pepper. Chop the chili pepper and add it to the other ingredients. I used fresh, but dried will do just fine. Finally, add the vinegar and oil.

  • Finally, mix and serve. The sauce is ready to accompany grilled meats. It’s also great with roasted potatoes.

Storage and Tips for Chimichurri Sauce

Chimichurri can be stored for 1 or 2 days in the refrigerator in a container with a lid.
