Ingredients
- 4 oz dark chocolate
- 6 tbsp butter (plus extra for greasing the ramekins)
- 2 eggs
- 1/3 cup sugar
- 1/4 cup flour (plus extra for the ramekins)
- raspberries (as needed)

Steps
First, chop the dark chocolate and transfer it to a bowl with the butter. Then melt it in the microwave in multiple rounds, stirring each time. Alternatively, you can also melt it in a bain-marie on the stove, placing the bowl with chocolate and butter over a pot of water.
As soon as the chocolate and butter have melted, add the sugar and stir until well dissolved. Let it cool slightly and add the eggs, stirring with a spoon or whisk. Once combined, add the flour and stir again until the mixture is smooth and lump-free.
Butter and flour the aluminum ramekins and transfer the mixture into each one. Bake the cakes in a preheated oven at 356°F (180°C) for 15 minutes. Of course, cooking times are relative and depend on the type of oven you have.
Once the cakes are baked, take them out and let them cool for a few moments. Then, invert them onto a plate. Dust with powdered sugar and decorate with fresh raspberries and a few mint leaves.
Storage and Tips for Chocolate Lava Cake
The chocolate lava cake can be stored in a cool, dry place for 1 or 2 days at most, covered with a glass dome.
