A very simple recipe that even the youngest in the house liked, who asked me to prepare it for her morning breakfast. Obviously, it’s a preparation that needs to be made a little in advance as it requires about half an hour of rest. For example, I prepared the porridge truffle in the evening for the next day.
It’s really simple and, although it’s a light and healthy recipe, it’s very tasty. It might be because I particularly love coconut, but trust me, as skeptical as I was, I changed my mind. Ingredients
- 1/2 cup whole grain rolled oats
- 7/8 cup coconut milk
- 1 tsp sugar
- 1 tsp unsweetened cocoa powder
- 1/2 cup plain yogurt
- 1/4 cup shredded coconut

Steps
To prepare the porridge dome, first mix the rolled oats in a saucepan with the sugar, cocoa, and coconut milk. You can obviously replace it with another of your choice. Also, you can replace the sugar with honey. Make sure the milk is unsweetened, otherwise you will need to omit the sweetener.
Bring to the stove and cook for a few minutes, stirring, until it has thickened. Once it has thickened, transfer it to a small bowl and let it cool.
In another bowl, mix the yogurt with shredded coconut. Then line a small bowl or an aluminum mold with plastic wrap and line the edges with the oat and milk mixture. Pour the yogurt with the coconut in the center and cover with more porridge. Seal with the plastic wrap and refrigerate for about 30 minutes.
After the rest time, retrieve the bowl and flip the dessert onto a plate. Decorate with shredded coconut and enjoy.
