Cold Bell Pepper Rolls, Light Recipe

Cold Bell Pepper Rolls, an easy summer recipe to serve as an appetizer or as a fresh and light main course. These rolls are a vegetarian variation of zucchini rolls with ham and cheese.

I confess that even the most skeptical in the house were won over, even though she always says she only eats red and raw bell peppers. However, these are cooked, or rather roasted in an air fryer. The thing that amazed me the most was discovering that she didn’t even realize the filling was made with feta. A cheese that only I appreciate in the family and that everyone else detests! Well, with a few small adjustments, I managed to please everyone once again. Obviously, I added some arugula and a clove of garlic with the inner part removed to the feta.

As already mentioned above, I roasted the bell peppers in an air fryer. A faithful ally in the kitchen, especially these days, when the heat is becoming more intense and the desire to turn on the oven is decreasing. Of course, you can also use a traditional oven, but increase the cooking time. Ingredients

  • 1 red bell pepper
  • 6 oz feta
  • 1 cup arugula
  • 1 clove garlic
  • 2 tbsp milk
  • black pepper (to taste)

Tools

  • Air fryer
  • Blender

  • Knife

Steps

  • First, wash the bell pepper, pat it dry with paper towels, and roast it in the air fryer at 374°F for 15 minutes. Alternatively, you can roast the bell pepper in the oven at 356°F for 30 to 40 minutes.

    After the cooking time, let the bell pepper cool slightly and peel it. You will see that the skin will come off very easily. Then remove the stem and the internal filaments and divide it into slices or strips about 3/4 inch thick.

    Separately, clean a clove of garlic, removing the indigestible inner part, and place it together with the feta and arugula in the blender’s cup. Then add the milk and blend until you obtain a smooth and homogeneous cream.

    Now pick up the bell peppers again and spread a teaspoon of cream on them, then roll them up to form rolls.

Variations and Tips

Cold bell pepper rolls can be prepared in advance and stored in the refrigerator for one or two days. If you have leftover feta and arugula cream, you can spread it on bread croutons for a light and delicious aperitif.
