  • 9 oz mascarpone
  • 1 1/8 cup cold heavy cream for whipping
  • 3/8 cup powdered sugar
  • coffee (as needed)
  • dark chocolate (as needed)

Steps

  • First, prepare the coffee and let it cool. Then, using an electric mixer, whip the cold cream straight from the refrigerator with the powdered sugar. When you have a soft cream, add the mascarpone and continue working the mixture with the beaters until you obtain a smooth, homogeneous cream. Transfer it into a piping bag and set aside.

    Next, slice the colomba so the pieces will fit comfortably inside the serving cups. Place the first slices of colomba in the cups to form the base. Moisten them with a few tablespoons of coffee and spread some of the mascarpone and cream mixture. Then form a second layer with more colomba slices soaked in coffee and more cream. Continue this way until all the cups are filled and the ingredients are used up.
