Creamy Veal Scallopini with White Wine

The creamy veal scallopini with white wine is a simple and tasty second course, ideal for an everyday dinner. A quick and creamy recipe, prepared in a pan with a few simple steps, like the pork loin scallopini with mushrooms and Marsala.

However, in today’s version, to the delight of the smallest family member who hates mushrooms, I preferred not to use them. I deglazed the floured meat with white wine, which will give this dish a creamy sauce perfect for scooping up with bread.

Quick and succulent, these creamy veal scallopini can be accompanied with sautéed mushrooms, or with classic mashed potatoes for the happiness of the little ones. Curious to discover how to prepare this delicious recipe? I’ll leave all the steps below, because the creamy veal scallopini with white wine will be ready in a click!

Ingredients

  • 10.5 oz veal slices
  • 2.5 tbsp butter
  • 3.5 fl oz dry white wine
  • all-purpose flour (as needed)
  • salt (as needed)
  • pepper (as needed)
  • chopped parsley (as needed)

Tools

  • Pan
  • Cutting Board
  • Knife with thickness adjuster
  • Plate

Steps

  • To prepare the creamy veal slices with white wine, first chop the parsley and set it aside. I used frozen parsley. I usually stock up by buying a lot of fresh parsley at the supermarket, clean it, chop it, and then put it in one or more lidded containers in the freezer, to have it ready when needed.

Then pour some flour onto a plate and generously coat the veal slices on both sides. Next, melt the butter in the non-stick pan and place the slices of meat. Sear them well on both sides over high heat for a couple of minutes.

Once well seared and golden, deglaze with the white wine, letting the alcohol evaporate. Season with salt and pepper, and cook over low heat with the lid on for 8 minutes. After cooking time, remove the lid and add the previously chopped parsley. Raise the heat and let the sauce thicken for a few minutes until it forms a delicious creamy sauce.
