Crepes with Asparagus Cream, Delicious Recipe

The crepes with asparagus cream are a very simple and super tasty first course, perfect to bring to the table on Sunday for lunch and on special occasions. It’s a recipe from my mom that I always prepare for Easter lunch. These asparagus crepes can be prepared in advance, to have much more time to dedicate to setting a special table!

The crepes with asparagus are a very quick first course to prepare. Once you’ve prepared the basic crepe recipe, all you have to do is make the asparagus cream. In short, it’s a kind of béchamel sauce, much quicker to make. The ingredients are the same and are blended with cleaned and blanched asparagus. A delicious creamy sauce that can also be prepared with other types of vegetables, such as artichokes. Moreover, to delight your guests, you can enhance the filling with some ham. I added smoked scamorza, which will provide the right contrast to the asparagus flavor. Now follow me in the kitchen, because the crepes with asparagus cream will be ready in a click!

Ingredients for 12 crepes with asparagus cream

  • 1.75 cups all-purpose flour
  • 3 eggs
  • 2 cups milk
  • 1.3 lbs asparagus
  • 2 cups milk
  • 3.5 tbsp butter
  • 0.35 cup all-purpose flour
  • 5.25 oz smoked scamorza (sliced)
  • salt (to taste)
  • pepper (to taste)
  • nutmeg (to taste)
  • 0.9 oz Parmigiano Reggiano DOP

Preparation of the crepes with asparagus cream

  • To prepare the crepes with asparagus cream, you must first start by making the crepes. You can follow the basic recipe here.

  • Now it’s time to prepare the filling. First, clean the asparagus by removing the stalk. Do not discard it, but use it to make a good vegetable broth. Then cut the cleaned asparagus into rounds and keep the tips whole. Next, blanch them in a pot with plenty of salted water and then let them cool.

    When the asparagus has cooled, set aside a few tips for the final decoration and put the rest in a blender. Add the flour, milk, and butter, and blend until you get a cream, almost like a béchamel sauce.

    Then put the obtained cream on the stove for a few minutes until it thickens and add salt, pepper, and nutmeg. Cook for a few more minutes until the spices are mixed. Then slice the scamorza and set aside.

    At this point, it’s time to fill the crepes. Place one or two tablespoons of cream and a slice of scamorza on the crepe. Then fold the crepe in half and then in half again to form a triangle. Continue this way with all the other crepes. Then place the crepes in a baking dish lightly greased with oil. Distribute the remaining cream on the surface of each crepe and the tips you set aside.

    Finally, sprinkle the grated Parmesan and bake in a static oven at 356°F for 20 minutes until golden.

Variations and Tips

You can store leftover crepes in a container in the refrigerator.

If you wish, you can use frozen asparagus. You can also prepare these crepes using artichokes or other vegetables you prefer.

You can also replace smoked scamorza with another cheese like processed cheese or fontina, or enhance the filling by adding cured meats of your choice.
