The recipe is very simple and I confess, when I made them, I didn’t expect them to be so successful, especially with Giorgia. In my opinion, pairing fruit with cheese is a way to find new inspirations. It’s true, usually the fruit most used to pair with cheese is pear, but I assure you that grapes have their charm too. I’ve seen some recipes pairing this fruit with goat cheese, but I wanted to try something different, pairing it with stracciatella. The result was really appreciated by everyone! Of course, you can choose the pairing you prefer. The only advice I give you is to use a sufficiently flavorful cured meat, like speck, to contrast with the sweetness of the other ingredients.
For this recipe, I caramelized the grapes in a pan with honey, rosemary, and a drizzle of oil. Of course, you should choose firm grapes that are not too ripe, otherwise, they risk falling apart during cooking. Once caramelized, you just have to assemble your crostini on slices of bread toasted in a pan or oven with a drizzle of oil. Few ingredients for a special result. - 3 slices bread
- 3.5 oz grapes (weight of cleaned fruit)
- 1 tbsp honey
- 1.5 tbsp extra virgin olive oil
- 1 oz speck
- 5 oz stracciatella

Steps
First, remove the grapes from the stem and wash them under water. Then dry them with paper towels and cut them in half. Place the honey, a bit of oil (about 2 tsp), and the grapes in a pan. Add the rosemary and cook over medium heat for 5 minutes, stirring gently from time to time to avoid breaking the grapes. If the grapes release a lot of water, increase the heat and let thicken. Once cooked, the grapes should look wilted.
In another pan, add the remaining oil and toast the bread slices on both sides until golden. Now spread a couple of tablespoons of stracciatella on the crostini, add the speck, and then the caramelized grapes with their cooking juices.
