Crostini with Caramelized Onions and Cheese, a tasty finger food, perfect for a delicious and simple summer appetizer. After writing two versions of caramelized onions, pan and pressure cooker, I couldn’t resist proposing some super delicious summer bruschetta.
Be warned, one leads to another! First of all, cooking caramelized onions in a pressure cooker really takes very few minutes. It takes longer to peel them than to cook! It’s true, a few tears when slicing onions cannot be avoided, but I guarantee it’s absolutely worth it. If paired with a slice of bread and goat cheese, they will be even tastier.
Perfect for an appetizer with friends or as a starter during a summer dinner, these bruschettas should be prepared in large quantities because they are in high demand. Giorgia loves them and almost certainly a less vegetarian version will arrive, but I can’t tell you more. Ingredients
- 16 oz red onions
- 1 tbsp extra virgin olive oil
- 2.5 tbsp brown sugar
- cup apple cider vinegar
- cup water
- 5.6 oz goat cheese
- chives (as needed)
- 8 slices bread
- salt (as needed)
- pepper (as needed)

Steps
First, prepare the caramelized onions in a pressure cooker. Clean the onions, peel them and cut them into thin slices. Then sauté them for a few moments in the open pot with the oil, stirring. Then add the vinegar, let it evaporate, and then add the brown sugar and water.
Adjust the salt and close the pot, bringing it to full power. As soon as it reaches the first ring, lower the heat and cook for 1 minute. If you don’t have a pot like mine, cook on the smallest burner over very low heat. Obviously, the cooking times are relative and depend on the type of pot you have.
In any case, onions do not need long cooking times, especially since they are thinly sliced. After the cooking time, gradually release the steam and open the pot. If the onions have released a lot of water, let them dry over high heat for a few moments. It wasn’t necessary for me.
Now put the goat cheese in a bowl with the chives chopped with scissors or a knife. Adjust with salt and pepper and mix.
Storage and Tips for Crostini with Caramelized Onions and Cheese
It’s best to top the bruschetta with onions right before serving. You can prepare the caramelized onions in advance and store them in the refrigerator for 1 or 2 days in a container with a lid.
